'Round New Orleans and the Gulf Coast region of Louisiana & Mississippi, Monday is traditionally Washin'Day and on this day 'Red Beans & Rice' are served up. You put the beans on in the morning along with a left over ham bone from the Sunday Dinner and leave it to simmer all day long while you do the washin'. Louis Armstrong loved this dish so much he would sign autographs "Red Beans & Ricely Yours, Louis Armstrong"
So, in keepin' with tradition i cooked some up today. I used my musical punch to cut out notes from Bay Leaves to sprinkle on top. Louis would have loved it!
